Heart Loving Meals - Summer BBQ Treat - Grilled Pork Chops w/Peach BBQ Sauce & Coleslaw

 Grilled Pork Chops with Peach BBQ Sauce

Ingredients

  • 1/4 cup plus 1/2 teaspoon kosher salt, divided
  • 1/4 cup firmly packed brown sugar
  • 2 cups boiling water
  • 3 cups ice cubes
  • 4 bone-in, center-cut pork chops, 1/2-3/4 inch thick (1 3/4-2 pounds), trimmed
  • 2 ripe but firm peaches, pitted and quartered, or 3 cups frozen sliced peaches
  • 1 medium tomato, quartered and seeded
  • 2 tablespoons cider vinegar
  • 1 tablespoon canola oil
  • 1/2 cup chopped onion
  • 2 teaspoons finely chopped fresh ginger
  • 2 tablespoons honey
  • 1/4 teaspoon freshly ground pepper, plus more to taste

    Preparation

  1. Place 1/4 cup salt and brown sugar in a medium heatproof bowl. Pour in boiling water and stir to dissolve. Add ice cubes and stir to cool. Add pork chops, cover and refrigerate for at least 30 minutes or up to 4 hours.
  2. Puree peaches, tomato and vinegar in a food processor until smooth.
  3. About 30 minutes before you’re ready to cook the pork chops, heat oil in a medium saucepan over medium-high heat. Add onion and cook, stirring occasionally, until golden brown, 5 to 7 minutes. Add ginger and cook, stirring frequently, until fragrant, 1 to 2 minutes. Add the peach puree, the remaining 1/2 teaspoon salt, honey and pepper to taste. Bring to a boil over high heat, then reduce the heat to a simmer. Cook until reduced by about half, 20 to 25 minutes. Reserve 1/4 cup of the sauce for basting the chops; keep the remaining sauce warm in the saucepan until ready to serve.
  4. Preheat grill to medium.
  5. Remove the pork chops from the brine (discard brine), rinse well, and thoroughly dry with paper towels. Season the chops with 1/4 teaspoon pepper and brush both sides with some of the reserved sauce.
  6. Grill the pork chops, turning once, until an instant-read thermometer inserted into the center registers 145°F, 2 to 4 minutes per side. Transfer to a plate, tent with foil and let rest for 5 minutes. Serve with the warm peach barbecue sauce on the side.

Coleslaw

Spice up your cabbage and lightly cook this healthy coleslaw recipe to take some of the bite out. This is a great way to get a very nutritious vegetable into your diet a bit more softly. Walnuts bring protein and omega-3 fats for a more substantial meal. The apples bring a sweet taste to help make this a great addition to your healthy vegan recipes.

Ingredients

 
  • ½ head of green or purple cabbage, shredded
  • 2 large carrots, grated
  • 1 avocado, mashed
  •  1 tsp stone ground mustard
  • 1 Tbsp apple cider vinegar
  • 1 tsp sea salt, or to taste
  • 3 Tbsp water, more or less to creamy consistency
  • Fresh parsley, optional, for garnish

Directions

1.Shred and grate cabbage and carrots by hand or in a food processor, and toss together in a large bowl.
2.Mix together the dressing by mashing the avocado and whisking in the rest of the ingredients (aside from parsley) to the consistency of your liking. You can also do this in a blender for a smoother texture.
3.Toss the dressing into the cabbage & carrots, arrange on the plate and garnish with a sprig of fresh parsley.

GRILLED SALMON WITH ROASTED TOMATO & GARLIC CREAM



Yield:  4 servings

4 Salmon; filets
Cilantro: leaves for garnish

ROASTED TOMATO  STEP 1
2  lb Plum tomatoes; UNpeeled
1  Shallots; peeled
2  Garlic; cloves peeled
1  Jalapenos

ROASTED TOMATO SAUCE STEP 2
1/4  cup  Chicken stock

ROASTED TOMATO STEP 3
1  cup Cilantro; chopped
2  tb Butter; unsalted

GARLIC CREAM STEP 1
8  Garlic; cloves unpeeled
2  tb Olive oil

GARLIC CREAM STEP 2
1/3  cup  Sour cream
1/2  cup  Heavy cream
1/2  ts Lime juice; fresh

GARLIC CREAM STEP 3
1 1/2  tb Water
Salt & pepper; to taste

ROASTED TOMATO
(1)  Roast Tomatoes, Shallots, Garlic & Jalepeno in oven for 40  minutes, until the Tomatoes are blistered and shallot is soft.   
(2)  Puree the roasted vegetables with Chicken stock in blender,  till smooth. Bring to a boil over medium high heat. Remove from heat and add Chopped Cilantro & Butter.   

GARLIC CREAM
(1)  Place unpeeled Garlic cloves and olive oil on broiler pan and  cover. ROAST for 20  minutes, until garlic is very soft. SAVE Olive oil; Peel Garlic and mash very well in mortar &  pestil.    (2)  Combine Garlic, reserved Olive oil, sour cream, heavy cream,  and lime juice, and mix well. Should be thin enough to pour.   
(3)  Add Water if needed for consistency; salt & pepper to taste.   

Grill Salmon

STRAWBERRY AND CUCUMBER SALAD



Yield:   6  servings.
Ingredients:
4½ cups (1½ pounds) California strawberries,  stemmed and  quartered 1 medium cucumber,  peeled, seeded and cut into ½-inch dice
¾ cup Italian parsley leaves
4 green onions,  chopped
6 radishes,  thinly sliced

Vinaigrette:
3 tablespoons rice vinegar
1½ teaspoons chopped fresh dill
1½ teaspoons chopped fresh mint
½ teaspoon ground cumin
½ teaspoon sweet paprika
½ teaspoon salt
½ teaspoon sugar
¼ cup extra virgin olive oil

Directions:
To make vinaigrette:
In bowl, whisk together all  vinaigrette ingredients except oil.  Whisk in oil until blended.

Our family was blessed twice 13 years ago with the birth of our second son, Jackson; Blessing number 1.
He was stricken with 2 strokes in-vetro and was ultimately diagnosed with Cerebral Palsy, scoliosis, and mental disabilities. Jackson was given a grim prognosis by his attending physician at St. Paul's Hospital. His intern neurologist, Emilio Delgado; was doing his residency at both St. Paul's and TSRHC took an interest in Jackson and took it upon himself to bring Jackson's case before the board at TSRHC. Jackson was admitted in May of that year, Blessing number 2.

TSRHC operates entirely on donations and they do such wonderful work! We have been extremely grateful for their generosity.
